Farmland is pretty, but it does get kind of monotonous eventually. And the rolling hills of the far northwest and southern parts of Illinois are very 5/7 scenic.

For crispy fries:

Soak in ice water after cutting for like 30 min to an hour. Make sure you cut the fries evenly, like 1/4 this each fry.

Then rinse them like 4/5 times.

Pat dry like a mofo.

Then bring a pot to a boil, boil them bitches. Like 3 minutes tops each. Maybe 4. No more.

Then pat them dry again.

Sprinkle with cornstarch.

In a bowl, mix cornstarch and seltzer water to make a batter like shit. Dip each fry in that batter, then fry them in oil for like 5 min @ 275. Mix them around and don’t overcrowded the pot. Put them on a rack to dry out excess oil.

Crank the heat up to 350, fry again, this will be quick. You’ll see them turn golden brown. Pull them out, back on rack to dry. Then season.

Seasoning:
I personally like just sea salt and pepper.

Or add in some garlic powder and paprika.

If you want them sweet, a little cinnamon and brown sugar. I know you said no sugar. But these fuck.

Sometimes I’ll get high and make them spicy. Add all the spices you can think of. I’ll also make curry fries. Just get you some good curry ground seasoning

I don't cut them that thin because they'll get too crispy. I like them a bit soft in the middle so maybe .375" - .5" square, or thereabouts. And the olive oil and maybe a bit of black pepper is all the spice I need, but you swamp folk probably want more. :)

We don't just use spices, but know how to use them in which quantities. I prefer a little salt and butter for sweet potato fries.

This is a little more involved for a week night dinner but I'm saving this!
I’ve never done it, but you can probably prep them on the weekend all the way before the final fry at 350. Then freeze them and pull them out the night you’re gonna cook them. Do the final fry the night you have them. Probably important you dry them out again if they absorb any moisture in the freezer. That way you could batch these up.

I like to save my larger food productions for the weekends. I enjoy doing the shopping earlier in the day, select my meat, produce and other ingredients and then take my time prepping and cooking. It's much more enjoyable than trying to rush after a work day and workout.

Normally I don't have sweet potatoes on hand, but this week I do.
Got some pork chops, heads of broccoli and potatoes. Could do smashed sweet tates, but I like the fries idea more.

I have some button mushrooms too, might make a shroom and onion gravy for the chops.

I love mushrooms. I should start adding them back into my diet.

I’ve done sweet potato fries before, but it’s been years. They definitely weren’t crispy like J’s will turn out, but they tasted fine. I’d make 1/2”x1/2”ish fries, lay them out on a baking sheet, sprinkle with salt, pepper, garlic powder, and paprika and call it a day. Can’t remember how long or what temp I’d bake them for, but they were tasty. The paprika really plays well with the sweet potato flavor
