I do want to ditch my CAAD and the old 26er for a nice steel cross bike. I think it'd be perfect for what I'd be doing most of the time. if it'd be worth stepping up to something like the Cosmic Stallion for the CF fork and (slightly better?) steel.

Deets. I want something like this to ride on our garbage roads.
I put smooth tires on my Giant Trance ( 8 year old 26er), but I really don't care for full suspension or the riding position on the street.
My dad offered to give me his Scattante (Performance bike house brand) cross bike with aluminum frame and CF fork, but I'm tempted to go full steel like this for 100% ZFG.
A friend also rides a fat tire bike on the road with the least aggressive tires he could find and loves it.
This also looks like a fantastic city bike.

Hm. Yeah I'm not sure what would be better for me. With some 40c tires anything will be an improvement as far as ride is concerned coming from the CAAD10, so on the ride front I'm not so concerned. I'll also probably never take the CAAD's replacement on anything but regular gravel trails. We have some paths around the canal and river that are gravel, but if I'm doing singletrack it'll be on the Trance. It'll be pulling the kid around in a carrier, commuting to work or up to Broad Ripple for coffee or drinks.
No all-city anywhere near me to try them. There is dealer that sells Surly and Salsa bikes closeby, though, they should have some cross and gravel bikes to try out to see what I like better.

Word of caution. I’d stay away from “touring” And “bikepacking” bikes. They’re built way too burly for racks and baggage and ride like dump trucks. The specialized sequoia was really disappointing.
