Burlington Vermont is beautiful, I have friend that lives there now and posts endless stories on instagram, needless to say I am jelly, but I can only speak for it when it snows. Portland, Maine, Boston and it outskirts are pretty beautiful.

Monterrey Cali with a trip to SFO would be a great option.

I really enjoyed the Pay Area of Cali.

Santa Cruz is also very nice and a great town with quite a bit of creativity. I did 10 days in Santa Cruz with a day trip to Monterrey and SFO. I would have enjoyed more time in Cali.

San Diego.. It'll be warm here, but you can also spend lots of time at the beach to cool off.

Safari Park, Zoo, or Sea World for Jack one day. Or do two of them over two days.. Zoo and Safari Park are related IIRC, so they might do bundled tickets.

Spend a day in La Jolla at one of the nicer beaches in the area, plus shopping, and there's the "children's pool" where there are just a bunch of seals hanging out and you can walk down pretty close to them which would also be fun for Jack.

Spend a day in Seaport Village which is also right on the harbor. They do outdoor concerts on the harbor during summer, so could check out one of those, or downtown is just a few minutes away and you can check out a cheap Padres game.

Mission beach is more touristy, but there's a little amusement park with mini golf, a small roller coaster, and carnival games. More food and shopping there.
