We love thinking of things to add to them. Some obvious ones are hard boiled egg, bacon, grilled chicken, shrimp, avocado, various cheeses, radishes, beets, garbanzo beans, pine nuts, craisins, tomatoes, and cucumbers (obv) chopped walnuts, boiled chestnuts, mushrooms, green/red/yellow/orange peppers, etc.
