I am honestly more concerned about test driving some other, different cars first. I know what a Corvette drives like. If I feel like I can enjoy something like a FoRS just as much, I think I’d rather go that route.
I doubt I will and could see ending back up at a Corvette, but I need to explore the options. They aren’t exactly rare, if that one sells, there will be more.

You seem a bit bored with the C5 , buy something new for the new experience, not because it may or may not be better or worse than what you have.
Look at my laundry list of motorcycle ownershit over the last decade - my favorites are always the ones that I have right now - I don't really buy with the mindset of something being better than the last.

I am very indecisive. I don't drive a ton. I want something new but kinda want to be as well.

I don't at all mean to belittle the C6 GS as 'just another one of what I have', I realize it is better in every way, but in terms of learning about driving it on a track it will be basically the same, but better.
C5 to C6 is going from Makers Mark to Weller, C5 to FoRS is going from Makers Mark to a margarita.

Yeah this guy posted on insta, apparently he's like 21 and maxx-profitted from this frenzy. He upgraded from an early year MK7 GTI which I saw on my daily dog walk; and is keeping another chunk for a down payment so that he can move out of the 'rents place. TBH, I'm not investing in the stock market right now. I have made my bed and will be focusing on debt reduction from now to -dom.
