I'm a long way from century type rides. My stretch goal is to knock on the door of a communist century by the middle of spring.
Come up my way and we can dabble with some smaller hills eventually. I've got a good 30 mile loop out and around Assunpink that has some gentle rollers and nice scenery/low traffic.

For anyone looking to get into gravel / CX stuff.... the new Giant Revolt looks freaking awesome. A little more relaxed geo compared to my bike but still generous BB clearance, can take 45c tires, fender/rack mounts, and all models come tubeless ready, thru axles front and back, and with hydro disc. 32x34 low gear (under driven! amaze) Starts at $2k.
Not a bad option at all. This is every bit as capable as my CX bike and probably weighs 5-8 lbs less.

I mean $2k for all that, cf frame/fork/steerer, hydro, thru axle, tubeless ready.... it's seriously a great spec and a very good price IMO. My bike was $1350 on fire sale, and I put $200 worth of drivetrain into it to get acceptable gearing, $100 of tires, and $600 of wheelset to get tubeless. Rode the CAAD to the office today just for shits, first time I've done it. ~6.5 miles, most of it on the rail trail to the edge of downtown, then ~3/4 of a mile dodging cars, scooters, and pedestrians to my building. The first part is nice, the latter not so much.
I thought it would be a good idea to just ride flats with toe clips so I wouldn't have to change shoes, but man I missed being clipped in. I also use Speedplays which have pretty tall cleats, and my minimalist shoes have lower stack height and so the saddle was a little too high.
Figured I'd take things easy and cruise, but then some 50+ year old dude in a full kit with roped AF legs passes me about 2 blocks south of my house and I couldn't let that fly, so I cranked it up and of course was a sweaty mess by the time I got to the office.
I could get used to this one nice days, doe.
